A student from Bromley’s Hospitality, Food and Enterprise Career College cooked up a storm yesterday, winning the Kent heat of Springboard’s Future Chef competition.
Savanah Sinclair (14) and fellow student, Lauren Green (16) had to impress judges by producing a two-course meal, for less than £7.
Savanah chose to create an exciting main course of Gnocchi with Peas, Parmesan, Pancetta and Courgette. For dessert, she made a Hot Chocolate Fondant with Berry compote and vanilla crème Analgise.
Lauren’s main course dish was a Cod and Chive Fish Cake topped with a Poached Hen’s Egg, and a Grain Mustard and Cheddar Sauce. This was followed by Orange and Almond Scented Madeleines with Dark Berry Compote, Vanilla Crème Fraîche and Orange Syrup.
Both girls only began their courses in September but demonstrated excellent cookery skills and were calm and professional. They produced both dishes in the 90 minutes allocated, including the washing up!
The judges said that the standard of the food was excellent and that they would be happy to see the dishes leaving their own kitchens. They also added that some of their chefs would struggle to cook the dishes to that standard seen today.
Savanah will now go through to the next round of the national competition – the London Regional Final. This is being held in the brand new training kitchens at the Bromley College’s Orpington Campus – in its Hospitality, Food and Enterprise Career College. This will take place on Wednesday 11th February.
She will be mentored by the head chef at Excel in Docklands, James Buckley, and work on her dishes for the next round.
Even though Lauren narrowly missed out on the next round of the competition, she impressed the judges so much that she too as she has been invited to Excel and offered a work experience opportunity.
